Meat Floss Swiss Roll-Happy Mother's Day












Mother’s Day is just 2 weeks later yet too early to celebrate. I just feel like doing this cake without any reasons. Just follow the heart. I am too lazy to make complicated fillings for the cake. Therefore I stuck to meat floss and mayonnaise. Is it easy? It is as easy as ABC.

Recipe:

Ingredients:

For the patterns:

a) ½ Egg, 15g sugar
b) 12 g plain flour
c) 8 g oil

Method: (line a 21 cm x 36 cm Swiss Roll baking tray with parchment paper)

1) Whip egg and sugar till thick and foamy..
2) Fold in flour and mix well till well blended.
3) Stir in C) and mix until well incorporated.
4).Spoon the batter into 3 small bowls. Red for flower petals; green for leaves and branches; you may use as many colours as you wish.
5)Spoon each colour portion into a piping bag, pipe out the patterns on to the prepared baking tray, bake at 190 degree for 1 ½ minutes.

Ingredients for Swiss roll: (21 cm x 36 cm Swiss roll baking tray)

(A)
7 3 g (about 4 eggs) egg yolks
20 g caster sugar
38 g corn oil
38 g fresh milk
73 g plain flour

(B)
146 g egg white
73 g caster sugar

Method: (chiffon cake method)
1) Mix ingredients (A) till well combine.
2) Beat ingredients (B) till peak form but not dry.
3) Mix (1) and (2) till well blended.
4) Pour the batter into the pre-baked patterns tray at 190 degree for 12 – 15 minutes.
5) Allow to cool slightly, spread with mayonnaise and sprinkle meat floss, then roll it up. Allow to sit in the fridge for at least 20 minutes to firm up the shape.

Papaya and Snow Fungus Sweet Soup (Dessert)






This is a Hong Kong style sweet soup (tangshui). It is very easy to prepare. You can prepare more and keep some in small containers and put them in the refrigerator. You will definitely feel refreshed after drinking this soothing chilled dessert.

Besides sharing the recipe, I would also like to share with you some of the health tips below.

Snow fungus contains iron, vitamin C, calcium and phosphorus.
White fungus is also said to be effective in nourishing the lungs, healing dry cough and clearing heat in the lungs.

Papaya is well known in preventing constipation and aiding digestion. It contains anti-oxidants that help in controlling premature ageing.. The high concentration of Vitamin C and Vitamin A boots our immune system. Papaya is also very good for the hair and helps in controlling dandruff. The anti-inflammatory properties in papaya will help reduce pain for those suffering from arthritis , edema and osteoporosis.

Sweet almond kernel tastes sweet. It is non-toxic and relieves cough. ,
Bitter almond kernel heals cough and expels phlegm. Bitter almond carries a slight trace of toxins (cyanide), hence please use it with extreme cautions.


Recipe:

Ingredients:

2 kg almost ripe papaya
4 tablespoon sweet almond kernel
1 tablespoon bitter almond kernel
80 g dried snow fungus
360 g rock sugar or more
20 cups water (or more as you wish)

Method:

~~1)Soak dried fungus in water for 30 minutes until soft. Trim the thick yellowish base and tear softened snow fungus into little florets. Rinse again to remove grit. Drain in.
~~2)Skin and discard seeds of papaya. Cut into 2 cm cubes.
~~3)Rinse both sweet and bitter almond kernels.
~~4)Bring 20 cups of water to boil in a deep pot. Add snow fungus and both almond kernels and simmer over moderate heat for an hour. Add rock sugar and papaya cubes and continue to cook for ½ hour.
~~5)Serve hot or cold.

Chocolate Swiss Roll







What do they look like? Bears or pigs? The answer is "Bears". Do not let your small kids see these ugly bears, they might have nightmare after seeing these bears. Hahaha...


The recipe is the same as Creative Strawberry Swiss Roll, except I added in 1 tablespoon of chocolate emulco.

Strawberry Jelly Slice








The process of making this cake was very fine and smooth. However, it was until the 3rd layer that I discovered my lamington pan was too shallow! The jelly overflowed as I poured it over the 2nd layer. By right following the recipe, the strawberries should be fully covered by the jelly.


The first time my friend made this, I could not guess what made up the middle layer. It was abit chewy, it felt like cheese but did not have that flavour. Interesting... later I discovered that it was marshmallows!


Recipe:

Ingredients:


~~2 cups (250g) sweet biscuit crumbs

~~125g butter, melted

~~100g packet pink marshmallows

~~1 teaspoon gelatine

~~1/4 cup milk

~~1/4 teaspoon strawberry essence

~~2/3 cup thickened cream

~~2 x 90g packets strawberry jelly

~~2 cups boiling water

~~ fresh strawberries


Method:

~~1) Grease a 19cm x 29cm lamington pan.


~~2) Combine biscuits and butter in bowl. Press evenly over base of prepared pan; refrigerate u ntil firm.

~~3) Combine marshmallows, gelatine and milk in saucepan, stir over low heat, without boiling, until marshmallows are melted. Transfer to large bowl, add essence; cool to room temperature.


~~4) Whip cream until soft peaks form, fold into marshmallow mixture, pour over base. Place strawberries over marshmallow; refrigerate mixture 30 minutes.


~~5) Dissolve jelly in boiling water; cool to room temperature. Pour jelly over strawberries, refrigerate until firm before cutting.


Keeping time: 2 days.

Gula Melaka Huat Kueh 椰糖发糕



"清明时节雨纷纷,路上行人欲断魂。借问酒家何处有,牧童遥指杏花村。" 光阴似箭,转眼又是清明节。今天一大早,我们一家人驾车回马国扫墓。一路开车到柔佛关口和到K城,交通都非常顺畅比预算时间早到许多。 我做了发糕回去拜拜,这个食谱在去年贴过的。我喜欢做这个发糕因为它真得很好吃。

Time really flies, Qing Ming festival is arriving. I make some huat kuehs as a offering for the Qing Ming. I like this huat kueh because it is very easy to make and the recipe dose not need yeast to work as the raising agent. And as you can see, all the huat kuehs are smiling. Aren't they beautiful?.And they are delicious too.

Recipe:
Ingredients:
500 g plain flour
1 1/2 egg ( about 86 g)
400 g gula melaka
250g water
250 ml coconut milk (santan)
3/4 teaspoon bicarbonate of soda
3 teaspoon hot water

Method:
~~1) Bring water to a boil with gula Melaka (palm sugar) until sugar dissolves. Drain and leave to cool.
~~2) Beat eggs and milk until well mixed, add in  flour and melted gula Melaka , mix well.
~~3) Dissolves bicarbonate of soda with 3 teaspoon of hot water, stir well and pour into the mixture of (2). Mix well.
~~4) Spoon batter into paper cups until 3/4 full, steam over high heat for 15 minutes.
